Do kittens need special "kitten food"?
No. Kittens require the same kind of food that their parents need to thrive - a low carbohydrate, high-protein, meat-based food. The only real difference is that a kitten will eat MORE food (on a per-pound of body weight basis) than Mom and Dad.
Nature doesn't produce specialized "mice for kittens"! Or, for that matter, tartar-control mice or outdoor-cat mice.

Near as I can tell and from my own experience, it goes like this:
Step One: Put the food on a plate and safeguard your own fingers.
